Shiro miso (白味噌), or white miso, is a lightly fermented soybean paste originating from Japan’s milder climates, such as Kyoto. It is characterized by its pale yellow color, sweet and mild flavor, and shorter fermentation period (3–6 months) compared to darker miso varieties like aka miso. Made with soybeans, rice koji (a fermentation starter), and a lower salt concentration, shiro miso offers a delicate umami profile ideal for dishes requiring subtlety and sweetness.
